Further to our work on the production of endo and exopolysaccharides, in our collaboration led by Elisabeth Wisbeck we demonstrate the production potential of fungi of the genus Pleurotus. In our study, we demonstrate the use of fungal fermentation to obtain these valuable products to the food and adjacent industries using agri-food waste as substrate, with promising results for grape peels.
